Achari Mathri (Masala Mathri)

Ingredients:

 

  • 2 cup all purpose flour planin flour, maida
  • 1/2 cup fine sooji samolina
  • 1-1/2 tsp salt
  • 1/4 tsp dry ginger powder saunth
  • 1/4 tsp asafetida hing
  • 1/2 tsp fennel seeds crushed saunf
  • 2 tsp coriander powder dhania
  • 1 tsp yellow mustard seeds powder
  • 1/2 tsp mango powder amchoor
  • 2 tsp red chili flake adjust to taste
  • 4 Tbsp oil
  • 3/4 cup lukewarm water use as needed

 

Apple Banana Pakora

Ingredients:

 

  • 6 Apple slices cut into rounds ¼ inch thick
  • 6 banana slices, cut into the long way banana should not be very ripe
  • ½ cup gram flour besan
  • 2 Tbsp rice flour
  • 1 Tbsp corn starch also can use arrow root powder
  • ½ tsp salt adjust to taste
  • ½ tsp cumin seeds jeera
  • ¼ tsp black pepper
  • ½ tsp mango powder amchoor
  • 1 Tbsp sugar
  • 2 Tbsp cilantro finely chopped, hara dhania
  • 1 Tbsp green chili finely chopped

 

Banana Puri (Kela Ki Puri)

Ingredients:

1/2 cup Banana mashed

  • 1/2 cup sugar
  • 1 tbsp ghee or butter melted
  • 1/8 tsp crushed cardamom seeds ilachi
  • Pinch salt
  • 3 tbsp coarsely ground almonds about 18 almonds
  • 3/4 cup whole wheat flour use as needed
  • 3/4 cup all-purpose flour use as needed

 

Jain Sweetcorn Bhajiya

  • Sweetcorn 1 cup

  • Gram flour (besan) 5 tablespoons

  • Oil for deep-frying

  • Green chillies chopped 2

  • Fresh mint leaves chopped 1 tablespoon

  • Fresh coriander leaves chopped 2 tablespoons

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Garam masala powder 1/4 teaspoon

  • Salt to taste

  • Sugar 1/4 teaspoon

  • Lemon juice 1 1/2 teaspoons

Banana Burger

INGREDIENTS:

 

500 grams cooking banana      150 grams peas

6 bread buns      3 cucumbers

3 tomatoes      1-tsp green chilly paste

1-tsp red chilly powder      1-cup coriander chutney

1/2-tsp. lemon juice      2-tsp. sugar

salt      tomato sauce

Bakul Vada

INGREDIENTS:

 

6 raw bananas      100 grams ground nut

20 grams sesame seeds      1-tbsp. lemon juice

2-tsp. Sugar      2-tbsp. green chilly paste

salt      1-cup coriander leaves

2-3 bread slices, oil for frying.

Banana Cutlets

INGREDIENTS:

 

6 cooking bananas      100 grams peas

1-cup grated coconut      1-tsp. green chilly paste

1-cup coriander leaves      2-tsp. lemon juice

2-tsp. Sugar      salt

15 raisins

1/2-cup arrowroot (corn meal powder).

Banana Kofta Curry

INGREDIENTS:

 

6 raw bananas,      2-cups coriander leaves

1-2-tbsp. turmeric powder,      1/2-tbsp. garam masala

3 tbsp. green chilly paste

3 tbsp. corn flour, salt.

Boil banana in pressure cooker. Peel out the skin and mash them. Mix turmeric powder, garam masala, green chilly paste, salt and corn flour. Make 20-22 equal balls. 

For the Filling: 100 grams ricota cheese

1/4 tsp. nutmeg powder

7-8 almond’s powder

3-4 cardamom’s powder.

Banana Panki

INGREDIENTS:

6 raw bananas

50 grams arrowroot (corn meal)      1/2-cup coriander leaves

2-tbsp. green chilly paste, salt      1-tbsp. cumin seeds

1/2-cup plain yogurt      2-tbsp. lemon juice

banana leaves. 

Banana Frankie

2-cups all-purpose flour      1/2-cup wheat flour

salt      ghee

For the Cutlets: 8 bananas, 2-tsp. green chilly paste, 3 slices of the bread, 1-tsp. mango powder, 1-cup coriander leaves, 1/2-tsp. sugar, salt , oil for frying.

For the Chutney:

1/2-cup mint      1 1/2-cup coriander leaves

4 green chilies      1-tbsp. lime juice

1-tsp. Sugar      1/2-tsp. cumin seeds

Salted Boondi

Ingredients :

  • 1 Cup Gram Flour (Besan)
  • 1/4 Cup Water
  • Pinch of Fruit Salt (Eno)
  • Oil (For Frying)
  • Salt To Taste

Fansi Dhokli

Ingredients:

For Dhokli :

  • 250 grams Wheat Flour (You can also use Bajri Flour)
  • 1 Teaspoon Chilli Powder
  • 1 Teaspoon Dhania Powder
  • Pinch of Turmeric Powder
  • Pinch of Carom Seeds or Ajwain
  • Salt to Taste
  • 2 Teaspoon Oil
  • Water

For Cooking:

  • 200 grams French Beans or Fansi.
  • 2 Tablespoon Oil.
  • Pinch of Mustard Seeds.
  • Pinch of Asofoetida (Hing)
  • Water
  • Salt to taste
  • 2 teaspoon chilli powder
  • 1 teaspoon dhania powder
  • Pinch of Turmeric Powder
  • Pinch of Carom Seeds or Ajwain

Corn Dhokla

Ingredients:

    • 1 1/2-cup rice
    • 150 grams corn cobs
    • 50 grams ghee
    • 1/4-cup grams dal flour
    • 1/2 tbsp. Lemon juice
    • 1-cup milk
    • 1-cup cilantro leaves
    • 1/4-cup coconut, grated
    • 1 tbsp. -green chili paste
    • Salt
    • 1 tbsp. Mustard seeds
    • 1/2 tbsp. Cumin seeds

Green Dal Dhokla

Ingredients:

    • 3 cup green grams dal (skinned)
    • 4-5 green chilies
    • Salt
    • Ghee
    • 3 tbsp. Cumin seeds
    • 1-cup cilantro leaves

Green Khaman

Ingredients:

    • 1/4-cup green peas
    • 2 cups grams dal flour
    • 1/4-cup cream of wheat
    • 4 green chilies
    • 1 tbsp. Sugar
    • Salt
    • 1/2-tsp. Citric acid
    • 1-2 drops green color
    • 1 tsp. Eno
    • salt
    • 1 small piece 1-cup cilantro leaves

For the baghar:

  • 1/2-tsp. Mustard seeds

    1/2-tsp. Cumin seeds

    1/2-tsp. Sesame seeds

    Curry leaves

Grilled Dhokla

Ingredients:

    • 3 cups rice
    • 1-cup urad dal
    • Salt
    • Butter-milk
    • 1/2-tsp. Baking Soda
    • 2 tbsp. Oil
    • 2 tbsp. – green chili paste

For the sandwich:

Tomato slices Cucumber slices

1/2-cup coconut – cilantro chutney Butter

Instant Dhokla

Ingredients:

    • 2 cups cream of wheat
    • 2 cups milk
    • Salt
    • 2 cups fresh plain yogurt
    • 3 tbsp. -green chili paste
    • 1/2-cup cilantro leaves
    • 1 tsp.soda

  • 2 1/2 cup All Purpose Flour (Maida)
